BBQ Meatloaf
There all kinds of American recipes for meatloaf, and like everything else, some are much better than others. I make a lot of meatloaves because my husband loves the dish. I have several different meatloaf recipes that we both enjoy, and this one is near the top of the list.
For this meatloaf recipe, I use extra-lean ground beef because I don’t like my meatloaf drowning in a puddle of fat. Because of the other ingredients I add, however, the meatloaf doesn’t get dry during the cooking process.
BBQ Meatloaf Recipe
Ingredients:
- 3 slices white bread, cubed
- 1 beaten egg
- 1/3 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Liquid Smoke
- ½ cup + 1 tablespoon bottled or homemade barbecue sauce
- 1 ½ pounds extra-lean ground round
- ½ onion, chopped
- 1 teaspoon black pepper
- 1 teaspoon minced garlic
- Salt, to taste
Directions: Place bread cubes in a large bowl and add egg, milk, Worcestershire sauce, Liquid Smoke, and 1 tablespoon BBQ sauce. Let stand for five minutes.
Add remaining ingredients, except BBQ sauce, to bowl and mix with your hands until everything is well incorporated.
Shape mixture into a loaf and form a trench in the center of the top. Pour ½ cup barbecue sauce in the trench.
Bake meatloaf at 375 degrees for about one hour.
